Recipe: Apple and Cinnamon Loaf Cake

 

 
It was a Wednesday Bake Off night and myself and my friends decided to meet up with cake. I was in need of a something quick, with ingredients I had in my baking stash! I turned to this Mary Berry recipe (seemed only fitting considering we were watching the bake off) and having tried it once, it's something I'll keep going back to and keep altering slightly to fit the occasion and what I need.


MAKES: TWO 450G LOAF CAKES      PREP TIME: 20 MINUTES          BAKE TIME: 35-45 MINUTES


THE CAKE
Line two 450g loaf tins with a loaf wrapper or baking paper
Heat the oven to 180⁰C, fan 156⁰C, Gas Mark 4
Rub the flour and butter together in a bowl to make breadcrumbs (do this with your fingers or in a food processor)
Stir in the sugar and cinnamon
Add the beaten egg to the mixture and stir until combined
Add the apple chunks to the mixture until they are evenly distributed
Divide the mixture equally between the two loaf tins
Top with the sliced apple
Bake in the oven for 40-45 minutes
