Recipe: Spring Raspberry Cupcakes


An easter spring get together with friends called for some cupcake baking. My friends always read the baking blog posts on HBH and request many things. I hadn't made these cupcakes before but they went down a storm so I thought I'd share the recipe with you all!


MAKES: 12 CUPCAKES OR 18 BUNS
PREP TIME: UP TO ONE HOUR            BAKE TIME: 30 MINUTES
 

 
 
THE CUPCAKES
Heat the oven to 180⁰C, fan 156⁰C, Gas Mark 4
Line a muffin tin with 12 paper cases
Cream together the butter and sugar
Add one egg at a time with a little flour for each, then add the remaining flour and baking powder
Mix together
Add the milk slowly until the mixture becomes softer
Place one spoon at mixture into each paper case
Add 3 raspberries to the middle
Fill with the remaining mixture evenly
Bake for 20-30 minutes, checking for a golden brown colour from 20 minutes
Leave to cool
 
THE ICING
Beat the butter and icing sugar together *Top tip - add the icing sugar a little at a time for less mess*
Add the food colouring of your choice
Beat for five minutes until smooth
Decorate the cupcakes
