Recipe: Feel the Goodness Spinach and Chickpea Curry


I made this for my housemates and one nicknamed it the 'feel the goodness curry'. I'd raided the supermarket for a load of delicious spices and put them all in a pan with a heap load of healthy ingredients. This is a super easy quick and cheap meal to make for your flatmates, but equally it lasts really well in the fridge for the next day and freezes as individual portions for later dates.



FEEL THE GOODNESS SPINACH AND CHICKPEA CURRY
Place two tablespoons of oil in a large pan and heat slowly
Add the chopped onions and garlic and fry for two minutes
Add the chopped peppers and fry for a further three-five minutes, stirring occasionally
Add the cumin, chilli powder, and paprika. Stir continually for two-three minutes
Add the tomatoes (if using peeled plum tomatoes, mash first) and leave to simmer, stirring occasionally, on a low heat
Add a sprinkle of salt and pepper to taste
After half an hour add the chickpeas,and begin boiling rice in a pan
Five minutes prior to serving add the spinach and stir well

*MAKE IT YOUR OWN*
For extra spice, add one whole chilli
For extra sweetness if you find the tomatoes too bitter, add 1 tbsp. of sugar.
